The present invention relates to a method of extracting an extract containing a functional ingredient for preventing alcoholic liver damage from black ginseng and fermented black ginseng. In detail, the method for producing a black ginseng extract according to the present invention includes the steps of putting dried ginseng in a steamer, raising the temperature to 80°C to 100°C, and steaming the steamed ginseng for 1 hour to 7 hours, and steaming the steamed ginseng at 40°C to 70°C for 3 hours to By repeating the step of drying for 8 hours and then cooling for 10 to 20 hours 3 to 5 times, the yield of total ginsenosides obtainable from black ginseng can be improved. In addition, by fermenting the black ginseng extract prepared as described above using a Lactobacillus pentosus (ATCC8041) strain, it provides a fermented black ginseng extract excellent in preventing or treating alcoholic liver damage.
