PROBLEM TO BE SOLVED: To provide a non-crosslinked gelatin that has a relatively high melting point of about over 30°C, and can cause sol-gel transition at around a biological temperature.SOLUTION: The present invention provides a non-crosslinked gelatin, the 5 mass% aqueous solution of which shows following properties (i) and (ii): (i) it has a melting point of 31°C or more by the PAGI method; and (ii) it maintains the gel state at 32°C for 3 hours or longer.SELECTED DRAWING: Figure 1
