PROBLEM TO BE SOLVED: To provide a method for reducing potassium in vegetables which does not require neutralization treatment or the like by a simple method. SOLUTION: The method of the present invention removes potassium in vegetables by immersing the vegetables in carbonated water for a predetermined time. The vegetables are cut vegetables such as cabbage and are immersed in carbonated water and water. It is dehydrated after washing. [Selection diagram] Fig. 1
