Meat extract is prepared from the flesh of whales and other marine mammals by cutting up the flesh and then heating it at below 100 DEG C. in juice obtained by heating the lean flesh at below 100 DEG C., the juice finally obtained being clarified by removing suspended materials and oil and then concentrated to the desired consistency. In the example given, lean whale flesh is cut up into flat discs and heated to below 100 DEG C. in jacketed digesting drums provided with stirring means, 30-40 per cent of the juice being extracted and separated by centrifuging from the flesh from which further juice is expressed in a worm or other press. The pressed cake may be worked up to meal or guano. The juice obtained is used to extract fresh pieces of whale flesh at below 100 DEG C., the juice being continuously removed from the digesting drums through an overflow and may be mixed with the juice expressed in the presses. The juice is passed through an oil separator which also removes coarse particles suspended in it, any whale oil left being removed in high speed separators. Albuminous matter may be coagulated and separated by filter presses, centrifuges &c. The juice is finally concentrated in a vacuum evaporator.ALSO:A meal or guano is obtained by working up the pressed cake obtained by cutting up the flesh of whales and other marine mammals, heating it at below 100 DEG C. in juice which has been obtained by heating the lean flesh at below 100 DEG C., separating the juice from the meat, e.g. by centrifuging, and pressing in a worm or other press.
