Controlled selective alcoholysis of glyceride fat/s to edible oils, e.g. margarine and shortening, and industrial oils, takes place by introducing the fat and an alcoholysis catalyst, and opt. solvent, into a reactor or a first reactor of a series under temp. conditions such that no crystals nuclei of glycerides other than GS3 (trisatd. glycerides) are formed; carrying out selective crystallisation of GS3 at temp. still kept low up to higher degrees of conversion, going through a GS2U (desatd. Triglyceride) crystal phase, opt. after the selective GS3-phase, and finally deactivating the catalyst and washing out modified fat.
