Dough raising equipment, which can be used for working very soft dough requiring long raising times, for French loaves has two long rails, possible strengthened by cross beams, which carry paired rods, with each pair of rods connected by a cloth almost along their whole length. The sag of the cloth can be reduced by increasing the distance between the rods, so that out of the trough or open vat a planar base of sufficient stiffness can be provided.
