1359470 Interesterifying glycerides UNILEVER Ltd 1 Dec 1971 [4 Dec 1970] 57648/70 Heading C5C Glyceride mixtures, particularly triglyceride mixtures, are catalytically interesterified in the presence of an aliphatic ketone as reaction rate accelerator. The ketone may be a C 3 -C 20 monoketone used in amount 0À2-50 wt. per cent of the glyceride mixture. Suitable catalysts are alkali metals or derivatives thereof in amount 0À01-0À5 wt. per cent. The reaction may be effected such that the glyceride mixture is entirely in the liquid phase (random interesterification) or partly crystallized (directed interesterification), the former at 25-100‹ C. and the latter at - 20‹ to 60‹ C. Examples describe the directed and random interesterifications of palm oil, coconut oil, and sunflower oil, but other animal and vegetable oils may be used.
