Water-soluble matls. esp. sugar, are prepd. by comminuting dates togther with their stones in an impeller-breaker to form 2-3 mm-thin strips which can then be extd. with water. Purified, conc., crude date-juice can be recovered as syrup, date juice or amorphous sugar for chipping to 'coffee house cubes' or compressed cubes. Dry solids from residual pulp may be used for fodder. Soluble sugar proportion of date-flesh diffuses into extn. water, whereas pectins and proteins do not go into soln. Up to 99% sugar can be extd. in a continuous process, carried out counter-currently.
