The plant comprises a combination of wine-making vessels, mechanical handling equipment for the reception of fresh grapes, heating, cooling and steeping services, means for separating and stocking the must and for disposing of or recycling the marc for the extn. of piquette. Pref. the plant comprises a set of vertical cylindrical towers, each made up of a number of superimposed, coaxial, cylindrical, gravity self-emptying vessels. The bottom one is a wine stock tank while the others are all processing vessels. The towers are pref. set in a circle around a central servicing turret which extends an annular service platform at each vessel level. The plant is used for industrial mfr. of wine and of piquette for subsequent distn. The installation can accept many grades of grapes in widely different conditions and adapts to various wine-making processes such as (a) conventional, (b) sparkling and (c) hot maceration for piquette.
