The knife consists of a handle (1) with an interchangeable blade (2) with a longitudinal cutting edge (3) and a slightly inclined longitudinal closed slot (9). the top of the handle has a recess (4, 5) which receives the blade and which has a rear wall engaging the blade back with a flap (7) cantilevered from the wall to confine the blade transversely. The recess has a blade mounting pin (8) which is received in the blade slot. The blade is mounted by fitting a rear curved part of the slot over the pin and pivoting the blade on the pin so that it is parallel to the handle. The end of the blade is then into the recess to correctly position it, the slot sliding over the pin.
