A raw foodstuff, esp. a vegetable, is packed under high vacuum in an envelope of sterilisable thermoplastic film, which tightly encloses it, and is then placed in an autoclave. In the autoclave the foodstuff is subjected under increased pressure to a temperature above 100 degrees C, for some time, so that it is preserved and cooked. To replace the preserving and cooking of foodstuffs, in cans, together with water, which not only increases transport costs but also takes away some of the flavour and quality of the product. The packed goods can be stored for many months without the possibility of their going bad, whilst retaining their full flavour. To serve, the pack is heated in a pan of water.
