A fish is advanced tail-forwards through a filleting station. At the upstream end, a pair of rotating knives cut through the belly, while a second pair of knives cuts through the back. None of these knives cuts the ribs. The fish is supported by guides which enter these cuts and support the fish while it passes through a rib-cutting station. The ribs are cut by a pair of stationary knives having a divergent, wedge shape tip engaged by a bulge-shaped backing plate. At a downstream station, two knives enter the cuts to remove the fillets from the skeleton. The rib-cutting knives are moved by cams to follow the profile of the fish. The apparatus fillets a fish efficiently. (Provisional Basic advised Week D21).
