PURPOSE:To prepare the titled lotus root having excellent taste, flavor and nutrient, and suitable as a relish taken with SAKE, by filling a mixture of MISO (fermented soybean paste), Japanese horseradish and sugar in the cavity of boiled lotus, leaving for a while, coating the lotus with pastry made of wheat flour, etc., and frying in an oil. CONSTITUTION:A lotus root is boiled and cut to a proper length. MISO mixed with Japanese horseradish, sugar, etc. is stuffed in the cavity of the lotus, and the lotus is left to stand for about 3-12hr. The surface of the lotus is smeared with raw starch and coated with pastry composed of wheat flour, a yellow pigment, etc., and protein, etc., and the product is fried in an oil to obtain the objective processed lotus root.
