METHOD OF SOFTENING RAW MATERIAL SOYBEAN FOR BREWING BY HIGH-PRESSURE BOILING AND STEAMING METHOD IN SHORT TIME

PURPOSE:To make it possible to carry out improved boiling and steaming with improved finish free from unevenness of boiling and steaming, by treating raw material soybeans in hot water, boiling and steaming it under specific pressure and laying steam inlets at the upper part and the lower part of a main body of a boiling and steaming can while setting a punching plate between the steam inlets. CONSTITUTION:The punching plate 7 is horizontally set in the main body of a cylindrical fixed boiling and steaming can and the steam inlets 13 and 14 are laid at the upper and the lower parts of the main body. Namely, raw material soybeans are immersed in hot water, swelled until the water content of raw material soybeans becomes 61-68wt.% and the raw material soybeans are fed to the main body 1 of the boiling and steaming can. Then, the soybeans are boiled and steamed at 2-6 kg/cm2 gauge pressure in a treatment time from the boiling and steaming to discharging not exceeding 10 minutes. Consequently, the raw material soybeans can be boiled and steamed in a short time and treatment efficiency can be more raised than an existing method. Circulation of steam through the raw material soybeans is improved and the raw material soybeans can be boiled and steamed with good finish without causing unevenness of boiling and steaming.
