PURPOSE:To obtain fermented Gynostemma pentaphyllum Makino having tea- like color tone and good fragrance free from grassy smell, by blighting, rubbing and fermenting thinly cut raw Gynostemma pentaphyllum Makino and drying it. CONSTITUTION:Fresh Gynostemma pentaphyllum Makino is thinly cut into about 3cm length, blighted by the sun or by a blighter for 30min-2hr so that water content is adjusted to 55-65wt%. Then, thinly cut pieces of Gynostemma pentaphyllum Makino are rubbed by a rubbing machine for 1-3hr, put in a fermentation chamber and fermented at 95% relative humidity in the chamber at 20-25 deg.C for given time. Then, the thinly cut pieces of Gynostemma pentaphyllum Makino are fed to a rotary furnace, heat-treated at 150-400 deg.C for 10-30min and continuously dried at 100-120 deg.C for 20-30min by a continu ous dryer.
