A polysaccharide wort is purified to increase its filterability, by first filtering off any insoluble material and then by treatment with a siliceous material at a temperature of at least 50 DEG C to remove proteinaceous impurities. The thus-purified wort can be used in enhanced oil recovery. The wort may be a Xanthane. Scleroglucane or a Schizophyllane wort. The siliceous material may comprise sand, silica or diatanaceous earth particles.
