CONSTITUTION:Relation formulas of a material balance of reaction substrate, material balance of water and/or deactivation of enzyme are obtained in terms of volume of a reaction tank 10 of fluidized layer type, raw material feed rate by a raw material feed pump 18, concentration of a raw material substrate thereof, concentration of liquid-phase substrate, concentration of solid-phase substrate and deactivation of enzyme, parameters are determined to minimize errors between analyzed values and calculated values to give an enzymatic reaction model and a raw material feed pump 18 and/or a water feed pump 22 is controlled by a controller 26 based on the model.
