PURPOSE:To obtain degustation improver moderating bitterness, etc., specific to food and improving quality of taste containing tannin as principal ingredient. CONSTITUTION:100 pts.wt. food having bitterness, etc., (preferably processed food such as citrus, coffee or beer) is mixed with tannin in an amount of preferably 0.001-5 pts.wt. to improve degustation of the food, etc.
