The method comprises a hydrolysis of a milk protein with proteases from Bacillus and Aspergillus oryzae to a degree of hydrolysis between 35 % and 55 % and a subsequent ultrafiltration, whereby the milk protein hydrolyzate is present in the permeate. The hydrolyzate exhibits an extremely low protein content detectable by the ELISA-technique. The hydrolyzate can be used in mother's milk substitutes and in dietetic foods.
