PROBLEM TO BE SOLVED: To discriminate and judge new and old refined rice easily by judging refined rice as new rice, old rice, and the like by colors using a reagent with sodium hydroxide, ethyl alcohol and demineralized water mixed in a solvent of a specific pH indicator. ;SOLUTION: A reagent solution is prepared by mixing sodium hydroxide, ethyl alcohol and demineralized water in a solvent of a pH indicator composed of methyl red(MR) and Bromothymol blue(BTB). Discrimination of refined rice among new rice, mold rice, very old rice, and the like is judged by colors by this reagent solution. That is the refined rice is judged as very old rice when the result obtained by sprinkling this reagent is pH4 and red, as old rice in case of pH5 and orange-red and also pH6 and yellow, as well-preserved old rice or not-well-preserved new rice in case of pH7 and yellow-green, and as new rice in case of pH8 and yellow-green. Discrimination and judgment can therefore be made easily even in a retail store in addition to a circulation process of refined rice so as to be able to provide discrimination and judgment of high reliability to dealers and general consumers.;COPYRIGHT: (C)1998,JPO
