PROBLEM TO BE SOLVED: To produce a well-harmonized Houttuynia cordata (dokudami) tea-added, barley tea-flavored sparkling alcoholic beverage by properly mixing barley tea, sparkling alcoholic beverage and Houttuynia cordata teat without practically unbalancing flavors of the alcoholic beverage. SOLUTION: This production of well-harmonized Houttuynia cordata tea-added, barley tea-flavored sparkling alcoholic beverage comprises a step of forming maische from pulverized malt as the starting material and warm water by mixing them, a saccharification process which saccharifies the maishe by keeping the maishe at a predetermined temperature for a predetermined period of time, a first filtering step which filters the saccharified maishe to obtain wort, a boiling step where the wort is mixed with hop and boiled, a main fermentation step where the hot wort is cooled, filtered, mixed with yeast, and fermented, a post-fermentation step where the fermented liquid is matured, and a second filtering process which removes the remaining yeast, etc., from the produced beer after the post-fermentation step, in such a way that the burley for burley tea is added at least at nay one of all the steps to extract the burley tea and also add Houttuynia cordata tea leaves to extract the Houttuynia cordata tea into the produced sparkling alcoholic beverage.
