PROBLEM TO BE SOLVED: To evaluate the separation and diffusion capacity of a volatile substance at a time of the production of beer by performing the evaluation by using a diffusion speed coefficient of dimethyl sulfate DMS to a gaseous phase at the time of the boiling of malt. ;SOLUTION: A heat exchanger 2 is constituted of a conical leading end part 2A and a cylindrical part 2B and the cylindrical part 2B is equipped with a plurality of heat transfer tubes. Hot water, high temp. steam or a high temp. heating medium flows through the peripheries of the heat transfer tubes. The malt charged in a boiling apparatus is heated to its b.p. and the malt reaching its b.p. is bumped from the heat transfer tubes to be circulated in the apparatus through a route of vessel 1 heat exchanger 2 (heat transfer tubes) umbrella- shaped member 4 malt liquid surface vessel bottom. From an analytical result, the diffusion speed coefficient of the boiling apparatus is calculated and the absolute value thereof is compared and investigated to judge whether the separation diffusion capacity of the boiling apparatus is good. Therefore, by using an overall diffusion speed coefficient, it can be relatively evaluated whether the boiling control part of the boiling apparatus, an apparatus structure or an apparatus itself is suitable for the separation and diffusion of a volatile substance.;COPYRIGHT: (C)1998,JPO
