A new bactericide against Listeria monocytogenes obtained from a culture of the bacterial strain Enterococcus faecium CTC492, known as entericin A, is described. The bactericide is a peptide with a molecular weight of 4,828 daltons which comprises a sequence of 47 amino acids and can be applied with considerable efficiency to prevent and avoid the growth and propagation of Listeria monocytogenes in foods, especially in meat and meat products and in milk and milk products.
