A broccoli trimming machine includes a flat support (7) with a holder for holding the broccoli stem during trimming in a cutting station (19). The cutting station has a mechanism (30, 31) for moving a pivoting curved blade (20) relative to a non-pivoting curved counter blade (21) between a spread position and a position in which the blades (20, 21) are close together with their ends lying in the plane of the support (7). A pusher (22) is advanced to push the broccoli head towards the blades (20, 21). The blade (20) can be pivoted between a first position at a positive angle to the support plane and a second position in which it abuts the counter blade at a negative angle to the plane of the support.
