PROBLEM TO BE SOLVED: To obtain the subject ammonia liberation inhibitor that can more effectively inhibit the liberation of ammonia gas from the urea included in shark meat by using a water extract of flower ears of blue curls (Prunella vulgaris) as an active ingredient. SOLUTION: The objective ammonia liberation inhibitor is obtained by using a water extract of the flower ears of blue curls, or preferably an alcohol extract of rhizome of Pheum palmatum, or preferably a water extract of black tea. The objective inhibitor can be produced by water extraction of flower ears of blue curls. The liberation of ammonia from processed shark meat can be inhibited by applying the water extract to the meat. This inhibitor is also suitably applicable to the meat of thornbacks.
