PROBLEM TO BE SOLVED: To obtain a new processed meat food by using a horse red meat, pig stomach and cattle intestine and contribute the expansion of a preference of taste. ;SOLUTION: This method for producing a processed meat food by specifying the kind or part of commercially supplied livestock meat (horse meat, pig stomach and cattle intestine) as raw materials and heat-treating with oil, comprises a pre-treating process for thawing or washing the raw material of the horse meat, pig stomach or cattle intestine with a hot water and cutting out in suitable sizes, an oil-heating treatment of pouring the raw material after the pre- treatment into a kidney leaf fat at an elevated temperature of 170°C, agitating with heating or boiling to perform a dehydration including the substitution of the water content with the kidney leaf fat and a seasoning treatment process for sprinkling at least a seasoning material containing table salt while removing the oil just after the oil heat-treatment and left for cooling, remove the peculiar smell of the raw material by performing a frying without coating so as to become ≤10% water content, and forms their shape suitable for capable of being loaded in bulk and also bagged.;COPYRIGHT: (C)2000,JPO
