PROBLEM TO BE SOLVED: To obtain a dehydrated matter of a plant represented by a dehydrated Chlorella exhibiting rapid dispersibility to an aqueous medium such as water and capable of sustaining a suspended condition for a long time and a beverage, a food color and feed for animal plankton using the dehydrated matter of the plant and to provide a method for producing the dehydrated matter of the plant. SOLUTION: A suspension of Chlorella cultured in a large amount by a normal method such as an outdoor pool culturing method or a tank culturing method is subjected to centrifugal separation, washed in water repeatedly and then dehydrated. The high concentration suspension of Chlorella obtained by the dehydration is subjected to heat treatment by using a plate type heat exchanger for heating and then promptly cooled by introducing into the plate type heat exchanger for cooling after the heat treatment. The suspension of Chlorella after the heating and cooling treatment is subjected to freeze drying to obtain the dehydrated Chlorella. One or more kinds selected from the group composed of dextrin, cyclodextrin and an oligosaccharide are preferably included as water-soluble saccharides to be added to the Chlorella.
