PROBLEM TO BE SOLVED: To provide a method for producing highly fresh tuna, which comprises instantly kill a caught alive tuna, stopping the vital reaction of the killed tuna, processing the tuna into dress style, loin style, fillet style or block style pieces in a state that the cells live, freezing the whole fish pieces at an ultra low temperature in the state that the cells of the fish pieces live, and then storing the frozen fish pieces so as not to deteriorate the fish pieces, and by which such the high fresh tuna as alive Sashimi (fresh slices of fish) can be provided, even after stored for a long period and then thawed.;SOLUTION: This method for producing the highly fresh tuna is characterized by separating caught tuna into alive tuna and died tuna, instantly killing each alive tuna to remove the blood, crushing the medulla oblongata and vertebra of the tuna to stop the vital reaction, immediately removing the blood, simultaneously removing the bowels, gills, fins, tails, head and bones, processing the left fish body into dress style, loin style, fillet style or block style fish pieces, freezing the all fish pieces at an ultra low temperature below a eutectic temperature (about -60°C) within a short time of 10 hours, preferably 8 hours, and then storing the fish frozen pieces below the eutectic temperature.;COPYRIGHT: (C)2002,JPO
