Oil from Ethiopian mustard seed with high content in oily acid.This invention refers to an oil of Ethiopian mustard seed (scientific name Brassica carinata A Braun) low in erucic acid (less than 2 % of weight with respect to the total content in fatty acids of the oil) and with an oily acid content between 60% and 80 % of weight of the total of fatty acid. This type of oil is not produced in nature by Ethiopian mustard plants and has been obtained by means of a biotechnological procedure. The oil is very stable faced with oxidation and high temperatures, which means that it is especially appropriate for human consumption and is also in the oil lubricants industry.
