PURPOSE: Provided is a process of preparing fermented soybean paste by fermenting steamed soybeans on dried horse manure, mixing a mixture liquid of snow-melted water, loess water and bamboo salt, crude drug extracts, malt powder, oat powder and the like and then aging, thereby, the soy sauce has a good taste and anticancer function. CONSTITUTION: Steamed soybeans are fermented on dried horse manure that is came from a horse having fed soybean, bean chaff, beanstalk and rice straw. Snow fallen on the winter solstice is melted and mixed with loess water and bamboo salt to give a mixture liquid having a salinity of 20%, which is heated with Phellinus linteus, Agaricus Blazei, Astragali radix and Glycyrrhizae Radix for 48hr, mixed with the fermented soybean fermented with horse manure and then aged for 30 to 45 days. Thereafter, the aged fermented soybean power is ground, mixed with malt powder, oat powder, bamboo salt and fermented soybean powder and aged for 6 months or more.
