The method for mechanically cutting the roots (3) off potato tubers (4) growing in clamps (20.1 - 20.4) uses horizontal cutters (5.1 -5.4). These are inserted into the clamps below the tubers. Independent claims are included for: (a) a method for improving the quality of potato tubers, as described above; and (b) a machine for carrying out the method.
