Elderflower drink is prepared by steeping elderflowers in boiled mixture of water, sugar, zest and lemon juice, cooling, filtration and pasteurization
Drink with elderflower contents, especially pollen, is claimed. It is prepared by keeping elderflowers and/or umbels in a boiled mixture of water, sugar, zest and lemon juice at 65-80 deg C for 1-3 hours and at 0-10 deg C for = 4 hours, then separating and pressing the flowers/umbels, adding the resultant suspension to the mixture, filtering and pasteurizing the filtrate. Drink with elderflower contents, especially pollen, is claimed. It is obtained by the following: (a) preparing a mixture of water, sugar, zest and lemon juice; (b) heating the mixture to boiling and boiling for 10-30 minutes; (c) cooling to 75-90 deg C; (d) adding elderflowers and/or umbels; (e) keeping the mixture at 65-80 deg C for 1-3 hours; (f) cooling the mixture to 0-10 deg C; (g) keeping the mixture at 0-10 deg C for = 4 hours; (h) stirring; (i) separating the flowers/umbels; (j) pressing these and combining the resultant suspension with the mixture; (k) filtering the mixture; and (l) pasteurizing the filtrate. Independent claims are also included for: (1) concentrate obtained from this drink; (2) elderflower refreshing drink comprising the specified drink, mineral water, lemon juice and vitamin C; and (3) the production of this drink by the cited stages.
