Probe and associated electronic circuit for determining quality of biological cells in fermentation process used in agro-food, pharmaceutical, chemical, biotechnological applications

A device has a probe for determining the quality of biological cells in a medium. The probe has devices delivering an electric current at an adjustable voltage to the medium and devices measuring the delivered current. The device also has a unit including an AC voltage generator (112) and a circuit (200) with a zero method measuring bridge (150) controlling automatically the delivery of signals to measure the capacitance (C) and conductance (G) of the medium. Independent claims are also included for the following: (a) determining the characteristics of biomass using a device as above; and (b) using the above device or (a) to measure the amount of salt, particularly sodium chloride, in a medium including biological cells.
