Production of powdered egg yolk enriched with docosa-hexanoic acid, with reduced cholesterol content, for use in health improving diet, by subjecting starting material to extraction with ethanol and adjusting level of acid

Powdered egg yolk rich in docosa-hexanoic acid (DHA) but with low cholesterol level is obtained by a) subjecting powdered yolk of eggs from birds on DHA-rich diet to extraction of glycerophosphides (GPL) and cholesterol with ethanol, to give product with reduced GPL and cholesterol, and ethanol extract of both, and b) adjusting DHA content of product by addition of GPL. Independent claims are also included for: (1) preparation of powdered egg yolk enriched with docosa-hexanoic acid, with reduced cholesterol content by subjecting powdered egg yolk from eggs produced by birds receiving DHA-enriched food to extraction of GPL and cholesterol with ethanol, in such manner as to produce powdered egg yolk with DHA content at least 2 wt.% per total wt. of lipids and cholesterol content up to 2.25 wt.% per total wt. of egg yolk; (2) powdered egg yolk having content of DHA at least 2 wt.% per total wt. of lipids, cholesterol content up to 2.25 wt.% per total wt. of egg yolk, and wt. ratio of DHA content to eicosa pentaenoic acid (EPA) content at least 8.
