PROBLEM TO BE SOLVED: To provide a method for maintaining the quality of vegetables and fruits by which the quality of vegetables and fruits can safely, simply and efficiently be maintained over a long period without using a antiseptic agent, a quality-improving agent, etc., and as a result, prolongation of shelf life of vegetables and fruits, delivery control in good harvest, transportation from distant places and import from foreign countries are made possible.;SOLUTION: This method for maintaining the quality of vegetables and fruits comprises irradiating vegetables and fruits which are kept in a state stored at a low temperature of 0-15°C with weak light having 10-500 lx illumination intensity. The vegetables and fruits include e.g. strawberry, tomato, cucumber, green pepper, and broccoli.;COPYRIGHT: (C)2003,JPO
