PROBLEM TO BE SOLVED: To provide a physicality improver for yolk lecithin, softening high thickness peculiar to yolk lecithin, and thereby improving its handling properties to make the yolk lecithin industrially usable by solving a problem that the thickness of the yolk lecithin is rapidly increased when the phospholipids contained in the yolk lecithin exceeds 40 wt.% to result in having solid-like physicalities, and thereby the handling properties such as a bad miscibility with the other materials are worsened to result in being significantly disadvantageous when industrially utilized, and to provide a method for improving physicalities of yolk lecithin using the physicality improver. ;SOLUTION: This physicality improver for yolk lecithin is obtained by making a yolk lecithin contain a compound having an alcoholic hydroxyl group.;COPYRIGHT: (C)2003,JPO
