PROBLEM TO BE SOLVED: To provide a method for simply and stably producing sliced devil's tongue jelly which has a texture making the best use of the original taste of the devil's tongue and into which a seasoning can well be soaked.;SOLUTION: This method for producing the sliced devil's tongue jelly comprises swelling devil's tongue powder with water containing a polyglycerol fatty acid ester, especially polyglycerol stearate, in an amount of 0.05 to 0.4 wt.% based on the total amount of the devil's tongue and the water, and then coagulating the swollen devil's tongue with a coagulating agent.;COPYRIGHT: (C)2003,JPO
