PPROBLEM TO BE SOLVED: To actualize a noodle cutting base with which noodle dough of noodles or buckwheat noodles is cut in fixed width by simple structure and to simply adjust noodle cutting width. PSOLUTION: A main shaft 2 and a guide bar 3 are arranged in a parallel state in the right and left direction ahead a cooking table 1. A sliding plate 4 through which both the main shaft and the guide bar are freely passed in a gappy state and an operation plate 5 through which only the guide bar is freely passed in a gappy state are installed. The slide plate and the operation plate are energized in a pull direction by a spring 6 attached to the guide bar. On the other hand, a cam cylinder 8 which is movable in the axial direction and changes a size in the axial direction by a rotation position is rotated in linking to the cutting action of a knife on the main shaft 2. One end of the cam cylinder is brought into contact with a part of the operation plate and the other end is brought into contact with the sliding plate at the intermediate position between the main shaft and the guide bar.
