PROBLEM TO BE SOLVED: To provide dried saury which has a good taste, a good aroma, and a good quality, is free from an oxidized oily stain, and can resist to storage for a long period, to provide a method for producing the dried saury, to provide a saury extract, and to provide a method for producing the saury extract. SOLUTION: Saury having a K value of 10% is cooked at 90 deg.C for 10 to 20 min and then smoked to obtain the dried saury. The dried saury is crushed, mixed with water, adjusted to a pH value of 6 to 7, enzymatically hydrolyzed in the presence of an aminopeptidase, and further enzymatically hydrolyzed in the presence of subtilisin to obtain the saury extract.
