The invention relates to a process for obtaining extracts based on polyphenolic compounds contained in cocoa, characterized in that it comprises: - the use of fresh broad beans, which have not been pre-treated or degreased, these beans being released from their pulp and shell in order to obtain clean almonds, - the crushing of said almonds in the presence of solvent (s), - the maceration of the crushed almonds under conditions which allow the desired compounds to be extracted, the filtration of the mixture of maceration, - the recovery of the extract containing said compounds from the filtrate. The invention also relates to extracts and their cosmetic, food and therapeutic applications.
