PURPOSE: A process of preparing Opuntia ficus powder in a sterile state suitable for foods or food additives is provided which has excellent sterilization effect as compared to conventional sterilization methods and maintains the original color of Opuntia ficus powder as it was. CONSTITUTION: To produce jelly as a functional food, 0.1 to 1.0% by weight of Opuntia ficus-indica var. Saboten Makino is heated with 2.0 to 3.0% by weight of oligosaccharides, 12.0 to 18.0% by weight of sugar, 2.0 to 3.0% by weight of cinnamon extract, 0.5 to 0.7% by weight of carrageenan and 75 to 80% by weight of water for 15 to 25min at 95 to 100deg.C in a double-boiler cooling utensil. Thereafter, the mixture is homogenized for 20 to 60sec at 10,000 to 15,000rpm in a homogenizer and sterilized in hot water for 20 to 35min at 70 to 80deg.C.
