PURPOSE: A method of manufacturing a coating agent composition for fruits capable of inhibiting the decomposition of nutrient such as sugar, acid, etc. contained in fruits by being adhered to the surface of fruits is provided. Therefore, the method reduces the cost of production and exhibits an excellent effect at a relatively small amount. The agent composition can maintain the storability and freshness of fruits for a long period of time. CONSTITUTION: A chitosan solution having a molecular weight of 10 to 500cp is dissolved in 2% acetic solution, A radiation dose in the range from 2 to 200kGy is delivered over the chitosan solution, sodium hydroxide is then added thereto to neutralize to pH 7.0. Thereafter, 0.5 to 5% by weight of glycerin and 0.01 to 5% by weight of Tween 80 are added thereto and the final solution is controlled to 100% by weight with deionized water.
