PURPOSE: A method of cooling tuna for improving problems of a cooling process generated after steaming tuna during the manufacture of tuna cans such as excessive evaporation of moisture in tuna meat, adhesion and hardening between tuna skin and meat and exposure to air for a long period of time is provided which increases yields of a product, reduces the cost of a cleaning process and produces a product which is far more sanitary than conventional products. CONSTITUTION: In the manufacture of a can of tuna fish through a washing, steaming, cooling, cleaning, canning, degassing, sealing and sterilizing process, the cooling process comprises (a) a process which causes tuner which is passed through the steaming process by a steaming machine(301) to move to a cooler(401), (b) a process which causes an exhaust pan(408) of the cooler to operate for 2 to 10min and to discharge heated air to the outside, and (c) a process which causes cool air to introduce into the cooler through a cool air supply pipe(409) and to inject through an injection nozzle.
