Determining the presence of volatile fatty acids (VFA) in matrices with a high organic content and anaerobic fermentations, comprises that a sample is taken from the fermenting substrate in a bio-gas assembly, an acid is added, and the presence of fatty acids is determined by gas chromatography. To determine the presence of volatile fatty acids (VFA) in matrices with a high organic content and anaerobic fermentations, a sample is taken from the fermenting substrate in a bio-gas assembly. An acid is added, and the sample allowed to settle. The sample is passed through a centrifuge until there is separation, and part of the surplus is removed. The presence of fatty acids is determined by gas chromatography. The acid is a carbonic acid in a 10 - 30 wt.% watery solution, and preferably formic acid.
