Using a strain of lactic bacteria with citrate-lyase, aspartate aminotransferase, but no citrate-permease activity to produce from citrate alpha-ketoglutarate used to produce aromatic compounds during maturation of cheeses
Using a strain of lactic bacteria possessing citrate-lyase and aspartate aminotransferase activity, but little or no citrate-permease activity to produce alpha -ketoglutarate from citrate and glutamate, is new. An Independent claim is included for a method of obtaining the novel strain, comprising: (a) obtaining citrate-permease negative mutants from lactic bacteria species capable of fermenting citrate; and (b) selecting those which are capable of producing alpha-ketoglutarate in a medium containing citrate and glutamate.
