To measure the level of iodide absorption in a substance, especially wheat flour, a solution is prepared which can develop iodide by an electrochemical reaction. The solution comprises distilled water, iodide and a weak acid, e.g. boric acid. The electrolysis current through the solution is measured, and the substance for analysis is introduced into it, and the electrolysis current is measured again. The measured currents indicate the iodide absorption level as a function of the iodide concentration. The apparatus, with a measurement head (1), has a vessel (3) to hold a suspension of the substance for analysis, with a stirrer (4). The substance for analysis is fed into the vessel by a vibrator (8). At least one pair of electrodes measure the electrolysis current, and at least one further pair of electrodes generate the iodide.
