PROBLEM TO BE SOLVED: To remove characteristic off-flavor of rice such as old rice and rice stored for more than two years and solve various problems such as the food situation and storage of rice.;SOLUTION: The off-flavor removing agent is produced by extracting two or more kinds of quinones and flavonoids such as naphthoquinone existing in green-leaved plant with an alcohol and eroding the obtained quinone-flavonoid extract liquid to a solution obtained by extracting active components of Houttuynia cordata, Sasa albo-marginata, Oenanthe javanica, Impatiens balsamina, etc. with an alcohol. The off-flavor removing agent can completely remove the off-flavor to achieve a state close to a new rice taking consideration of the tissue structure and enzymatic activity of old rice and rice stored for more than two years.;COPYRIGHT: (C)2004,JPO
