PROBLEM TO BE SOLVED: To provide an apparatus for producing a roux having ripe feeling by quickly and uniformly cooling a hot-cooked roux and provide a method for the production of the roux. ;SOLUTION: The apparatus for the production of roux is provided with a hot cooker 10 to cook a starch raw material, an oil and fat raw material and a seasoning-containing raw material by heating the material under stirring and a batch-type cooling cooker 50 placed on the downstream side of the hot cooker and cooling the cooked materials transferred from the hot cooker 10. The cooling cooker 50 is provided with a stirring means 70 to stir the received raw materials, a water-jacket 60 built in the wall, cooling fluid supplying apparatuses 62, 62a, 62c to supply a cooling fluid to the water jacket and heating fluid supplying apparatuses 62, 62b, 62d to supply a heating fluid to the water jacket.;COPYRIGHT: (C)2001,JPO
