PURPOSE: A method for producing vinegar using wild greens and vinegar produced thereby are provided. The produced vinegar has an improved taste and nutrition by using various wild greens. CONSTITUTION: A method for producing vinegar using wild greens comprises the steps of: sterilizing a 100L pot; washing butterbur, aster scaber thunb, shepherd's purse, mitsuba, sedum, mugwort, Rumex crispus, buckwheat, mushroom, Houttuyniae Herba, Saururas chinensis Baill, Agrimonia pilosa LEDEB., Plantago asiatica L., dandelion, Hemerocallis fulva L., Codonopsis lanceolata, Platycodon grandiflorum, hemp, Polygonatum officinale All, Adenophora triphylla var. japonica, Cirsium japonicum var. ussuriense, wild rocambole, Ixeris dentata, herb, and Youngia sonchifolia Max and inserting them into the pot; inserting 10kg of a mixture of black sugar, honey and oligosaccharide into the pot; and sealing the pot with hemp cloth and maturing it in the shade at room temperature for 1 year.
