PURPOSE: A method of making a red pepper paste-croaker product by aging croaker flesh with ginseng powder and a herbal extract is provided. It eliminates a fishy smell of a dried croaker(yellow corbina) while reducing the salinity of red pepper paste without affecting the quality of the product. CONSTITUTION: Flesh stripped from a dried croaker is immersed in red pepper paste and then fermented. The fermented flesh of a dried croaker is separated from the red pepper paste, immersed in red pepper paste containing 5 to 15% by weight of a herbal extract and ginseng powder, based on the weight of the red pepper paste and then fermented at 15 to 20deg.C for 25 to 35 days. The herbal extract is obtained by extracting 10 to 30 parts by weight of each of Liriopis Tuber, Hoelen, Corni Fructus, Rehmanniae Radix Preparata and Astragali Radix and 100 parts by weight of Ginseng Radix rubra.
